Homemade chocolate snacks with sponge cake

These snacks are very simple to prepare, they contain easy to find ingredients. They appear as sandwiches of sponge cake filled with hazelnut cream and garnished with chocolate glaze. They are very soft and light, they are baked in the oven.

Ingredients

  • 3 eggs at room temperature
  • 80 g of flour 00
  • 100 g of granulated sugar
  • 1 pinch of yeast
  • ½ vial of almond flavoring
  • 1 pinch of salt
  • Non-alcoholic bath
  • Hazelnut cream
  • 60 g of dark chocolate

Take some eggs at room temperature and shell them in a bowl, whip them for about ten minutes after adding salt and sugar until they are swollen and foamy. We sift the flour together with a pinch of yeast, mix and then add to the eggs, working the dough with an electric whisk. When we have obtained a smooth and homogeneous mixture, line a pan with parchment paper and pour in the mixture that must be baked in the oven for 5 or 6 minutes at 200 °.

When the surface turns golden, we take it out of the oven and we have the base of our snacks to be cut into discs and wet with non-alcoholic syrup. On half of the discs we have to spread with a generous teaspoon of hazelnut cream, then take the clean discs and overlap them to form a kind of sandwich. The chocolate is poured over these delights after we have melted it in a double boiler.

Homemade chocolate snacks with ricotta

This recipe is sweet and delicate, refined, to be used also for a dinner as well as for a snack. It is not easy but it is worth preparing it for the sake of tasting it, you will not regret it.

To prepare the pastry you need

  • 175 grams of flour
  • 60 grams of sugar
  • 70 gr of butter
  • 1 egg
  • a pinch of salt
  • Lemon peel

For the filling

  • 200 grams of cottage cheese
  • 2 tablespoons of sugar
  • 100 grams of dark chocolate

For coverage

  • 125 grams of flour
  • 60 grams of sugar
  • 35 gr of butter
  • 60 ml of milk
  • 1 egg
  • a pinch of salt
  • 1/2 sachet of yeast
  • Lemon peel

To make the pastry base, take all the ingredients and mix them in a bowl, mixing quickly and then let it rest. We also start with the topping cake, also in this case we take all the ingredients but this time we put it in the planetary mixer to obtain a thick cream to which also add the yeast.

Missing to start the cream based ricotta cheese to mix in a bowl with the icing sugar.
The oven must be heated to 180 ° and a mold with a diameter of 24 cm must be prepared. We spread the layer of pastry leaving aside a piece for the side dish and fill with the ricotta cream to flavor with chopped chocolate.

We overlap the cake topping and then bake at 180 ° for 25/30 minutes. In summer it is better to keep this cake in the refrigerator because of the ricotta but being cooked, in the other seasons it is not needed.

Homemade chocolate snacks with tangerines

Delicious and very winter this recipe is also simple to prepare because it is nothing more than a chocolate and mandarin cake further covered with dark chocolate, for those who really love chocolate. Instead of tangerines, you can use tangerines or the citrus fruit we prefer, taking into account the degree of acidity that can result. Ingredients

For the cake

  • 3 eggs
  • 50 grams of bitter cocoa
  • 100 gr of starch
  • 100 gr of flour
  • 150 grams of sugar
  • 150 ml of milk
  • 1 sachet of yeast
  • a pinch of salt

Ganache Chocolate

  • 100 grams of dark chocolate
  • 100 grams of whipping cream
  • 15 grams of butter

Decorations

  • 100 grams of dark chocolate
  • tangerines

We combine the eggs with the sugar to form one soft cream to which add sieved starch, flour and cocoa. After mixing, pour the milk slowly and continue for a few minutes and then pour in the yeast, always continuing to work the dough. Prepare the pan by greasing and flouring it, and then pour in the mixture that must cook for about twenty minutes.

For the Ganache Chocolate, pour the cream and butter into a pan where they must heat up to boiling. We turn off and add the chopped chocolate, stirring until it melts. We prepare to put the pot on a bowl in a bain-marie and work with electric whips for 5 minutes, then we pause everything for 5 minutes in the freezer, then work again with the whips until we have a creamy soda in front of it.

We take the cake out of the oven, let it cool and then cut it in half to stuff it with Ganache Chocolate and close it again. All that remains is the final coating, always strictly chocolate. Let it melt in a bain-marie and then pour it on the cake in an irregular way, applying on top of the mandarin wedges to be covered again with a layer of melted chocolate.
