To be able to make Valencian paella, start by preparing the vegetable broth, which you will need to cook the rice. In the meantime, you can prepare the other ingredients and, above all, the meat: clean the rabbit from the entrails and cut it into pieces 2-3 centimeters thick.

Speaking of meat, take the chicken drumsticks and divide them in half, then keep them aside. Clean the peppers and remove seeds and internal filaments, then proceed to cut them into chunks. Take the tomatoes, cut them into slices and chunks, check the green beans and cut them in such a way that they are smaller in size, in half or a third.

Once this stage is over, take one paella pan (There are special ones, and you can find them on the market or on the internet at low prices). If - as likely - you do not have a specific pan at home for this dish, you can still solve everything by taking a very large pan, possibly made of iron or steel: here you will have to heat the oil and add the rabbit and chicken. Then, salt, pepper and brown for about 15 minutes over medium-high heat, avoiding repeatedly touching the meat.

Once the meat is browned, try to move it with a ladle to the sides of the pan and add the vegetables in the center. Cook for about ten minutes and then add the last main ingredient, the rice. Toast it for about a minute, mixing it with the other ingredients, and then add the vegetable broth.

Your most difficult task is practically done. In fact, all you have to do is continue cooking for about 30 minutes, over medium-low heat, without stirring.

At the end of this cooking period, the liquid should have been completely reabsorbed. So, all you have to do is turn off the heat, cover the pan with aluminum foil and let it rest for another ten minutes. Then, remove the aluminum foil and mix well to combine everything.

Are you done! Your paella is ready to be served!
